Thai Chicken Patties
Do you fancy an easy BBQ recipe that will tantalise the taste buds? Asian cooking doesn’t have to be complicated to get amazing flavours. These little beauties can even be prepared before the guests arrive to give you more time to socialize.
Makes enough for 4 main serves.
500gm of Organic chicken mince
2 tablespoons Red Curry paste (1 tablespoon works too if you don’t want them too hot)
1 teaspoon of kaffir lime leaf finely chopped
1 egg
Fish sauce to taste (about a teaspoon)
Combine the ingredients and place spoon-sized balls onto a hot bbq plate, flatten them a little, and cook for 2 minutes then transfer to the grill for 1 minute, then turn for another minute or 2.
Serve on a platter over a bed of butter lettuce leaves, thai basil and mint, alongside your Hot & Sour sauce.
Hot & Sour Sauce
2 Red chillies
4 cloves of garlic
2 caps of fish sauce ( start with 1 and increase slowly to taste)
Half cup lime juice
1 teaspoon palm sugar
Using a mortar and pestle pound chillies and garlic together until a paste is formed. Transfer to a bowl, add fish sauce, lime juice and sugar to taste. Adjust flavours so that sauce is equally salty and sour with a touch of sweetness. Stir well and strain liquid into your dipping bowl.
